Furofuki Daikon Boiled Radish Sweet Miso Sauce Recipe



Today's Oishiy recipe is ''Furofuki Daikon Boiled Radish with Sweet Miso Sauce''. This is a classic winter dish in Japan. It is very soft looks like chiffon cake. Traditionally served with sweet miso sauce. Japanese food essence and vegetable only.


---INGREDIENTS---

5 serving

Radish 400g
Dry Kelp 15g
Rice grain 10g

Miso 30g
Soy Sauce 5ml
Sake 15ml
Mirin 15ml
Sugar 15g
Water


---PROCEDURE---

1.Cut radish into 3-4cm, peel radish skin around and cut sharp edge of radish chamfer then cut cross on  both top scoring.
2.In a pot put cut radish, rice grain, and water (level of radish) in low heat, boil for about 30min. and drain water.
3.In a pot (no heat) put water, kelp and soak for 30min.
4.Open the stove in low heat add radish, soy sauce, boil until radish are soft and set aside.
5.In a pan put soup from boiled radish, miso and mix, then sake, mirin, sugar mix well, boil in a minute until sticky.
6.Place the kelp and radish on top, cut in square add sweet miso sauce on top of radish and sprinkle with Japanese basil leaf.
7.Serve while its hot.
